Estudante de Engenharia de Alimentos desenvolve doce de leite a base de extrato de soja

Um doce de leite diferente, desenvolvido especialmente para pessoas que não podem ingerir o tradicional produto formulado com leite. Foi pensando justamente nas pessoas que apresentam intolerância à lactose que a estudante Fabiana Gerolim, formanda do curso de Engenharia de Alimentos da FAZU (Faculdades Associadas de Uberaba), começou a desenvolver uma pesquisa científica, onde o doce de leite tradicional passou a ser formulado de maneira diferenciada. Ao invés de utilizar leite de origem animal na preparação do doce, Fabiana, orientada pela professora Keyla Cristina Cotrim, desenvolveu três formulações diferentes do doce, produzidas com extrato aquoso de soja, popularmente conhecido como, leite de soja.

Fabiana lembra que a indústria alimentícia está cada vez mais consciente da necessidade de produzir produtos inovadores e ao mesmo tempo adequados à nutrição. “Por isso, já é possível encontrar variados tipos de novos alimentos no mercado com aspectos nutricionais relevantes, como os reduzidos parcial ou totalmente de gorduras, vitaminados, enriquecidos com ferro, fibras, diet e light e produtos com ausência de lactose.

Muitas pessoas sofrem por serem intolerantes à lactose, que é o principal carboidrato do leite, resultado da deficiência ou ausência da enzima intestinal chamada β-galactosidase ou, simplesmente, lactase. O trabalho teve por objetivo desenvolver um doce do extrato aquoso de soja em contrapartida ao doce de leite tradicional”, comenta ela. Durante a pesquisa foram elaboradas três formulações de doce de extrato aquoso de soja (A1, A2 e A3), com diferentes concentrações de pectina, substância que confere textura ao alimento. A amostra de doce do extrato aquoso de soja A1 com 4,8% de pectina foi feita com extrato de soja em pó e as demais com extrato de soja líquido. Foram feitas análises físico-químicas, sensoriais e microbiológicas em todas as amostras.

A amostra A2 com 6,8% de pectina foi a preferida pelos julgadores no teste sensorial de Ordenação-Preferência. As amostras A1, A2 e A3 do estudo apresentaram maiores teores de proteínas, fibras e cinzas, e menor teor de lipídeos quando comparados ao doce comercial. “Serão necessários novos estudos para o melhoramento sensorial do doce do extrato aquoso de soja (A2) em comparação ao doce de soja comercial. Mas observamos que o doce de “leite” de soja é uma excelente alternativa para utilização do grão de soja pela indústria, além de uma opção para as pessoas intolerantes a lactose e uma fonte nutritiva mais saudável para todos”, ressalta Fabiana.
